Tender, golden chicken infused with fresh rosemary, garlic, butter, and lemon. This simple one-pan recipe delivers a comforting homemade dinner with very little preparation.

Ingredients
- 4 boneless, skinless chicken breasts or 6 bone-in chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 4 garlic cloves, finely minced
- 1½ tablespoons fresh rosemary, finely chopped
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- ¾ teaspoon salt, or to taste
- ½ teaspoon ground black pepper
- ½ teaspoon onion powder
- Juice of ½ lemon
- ½ cup chicken broth
- 1 teaspoon Dijon mustard
- 1 tablespoon honey, optional
- Fresh rosemary sprigs, for cooking and garnish
- Lemon slices, optional
Instructions
1. Prepare the chicken
Pat the chicken dry with paper towels. If using thick chicken breasts, pound them gently until they have an even thickness. This helps them cook evenly.
Season both sides with salt, black pepper, paprika, onion powder, thyme, and chopped rosemary.
2. Sear until golden
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken and cook without moving it for approximately 4–5 minutes, until the underside develops a golden crust.
Turn the chicken over and cook for another 3–4 minutes. Transfer it temporarily to a plate. It does not need to be fully cooked at this stage.
3. Prepare the rosemary sauce
Reduce the heat to medium. Add the butter and minced garlic to the same skillet.
Cook for approximately 30 seconds, stirring constantly, until fragrant. Do not allow the garlic to burn.
Pour in the chicken broth and scrape the browned pieces from the bottom of the pan. Stir in the Dijon mustard, lemon juice, and honey, if using.
Add one or two fresh rosemary sprigs and allow the sauce to simmer for 2 minutes.
4. Finish cooking
Return the chicken and any juices from the plate to the skillet.
Reduce the heat to medium-low, cover, and cook until the chicken is tender and fully cooked:
- Boneless chicken breasts: approximately 8–12 minutes
- Bone-in chicken thighs: approximately 20–25 minutes
Spoon the rosemary sauce over the chicken several times during cooking.
The thickest part of the chicken should reach an internal temperature of 165°F (74°C).
5. Rest and serve
Remove the skillet from the heat and allow the chicken to rest for 5 minutes.
Discard the cooked rosemary sprigs. Spoon the warm garlic-rosemary sauce over the chicken and garnish with fresh rosemary and lemon slices.
Oven Method
After searing the chicken, prepare the sauce in an oven-safe skillet and return the chicken to the pan.
Bake in a preheated oven at 375°F (190°C) until the chicken reaches 165°F (74°C):
- Boneless breasts: approximately 15–20 minutes
- Bone-in thighs: approximately 25–35 minutes
Cooking time varies according to the thickness of the chicken.

Storage and Reheating
Store leftover chicken and sauce in an airtight container in the refrigerator for up to 3–4 days.
